The elder tree is full of beautiful ripe berries at the moment and the birds are really enjoying this abundant food source. With the arrival of colder weather and the inevitable flurry of colds and flus that tend to do the rounds at this time of year, having a herbal remedy to hand is a must. Elderberries are full of vitamin C and antioxidants that will boost the immune system, making them the perfect ingredient for a winter wellness tonic.
Heading outdoors together with family to forage these small berries involves everyone in the process and the sense of satisfaction that comes from creating a herbal remedy for your own health and healing is very powerful. Remembering to take only what you need, and to leave plenty of wildlife, gather about ten or fifteen heads of berries, trying some for taste as you go but ensuring to leave the majority for cooking.
Recipe:
1 cup of elderberries
1 cup of water
1 stick of cinnamon
3 cloves
1 thumb sized nub of ginger grated
2 dessert spoons of date syrup


Put the elderberries, water, cinnamon, cloves and ginger in a pot and bring to the boil. Reduce to a simmer and allow to cook for 30 minutes, keeping an eye that the liquid doesn’t reduce completely. Allow to cool for a further 30 minutes and then pour the mixture through a fine sieve using a wooden spoon to mash the berries and push the liquid through to the bowl underneath. Add date syrup to the bowl to taste, 2 dessert spoons is a guideline, allow your taste buds to be your guide.
Pour small amounts over porridge or dessert to add flavour, or use as a cordial adding hot water and a slice of lemon to make a warming and healing drink.
